*updated 09.12.24* In this 8 page PDF, I’ve shared which cupcake boxes I love to use and which size boxes I use for each cupcake bouquet size I offer my customers.  Packaging can be very much trial and error, so it’s best to spend a little more per box FIRST so you know it’s the one you want.  THEN you can go ahead and buy in larger quantities to save on the cost per box!  Remember to add the cost of packaging to your prices.  I hope this guide helps and is useful in knowing which size boxes you need for your bouquets and cupcake offerings!

Bouquet Placements Guide

**UPDATED 09.06.25** This guide shows you where to place your cupcakes for each size bouquet.  Use the coloured circles to help make your designs for your bouquet.  I like to include a large “statement” flower, a flower with a bit of texture or detailed centre and 2 mini designs.  But your creations are entirely your own!  See what inspires you and get carried away… the more you create, the more you learn and develop your own unique style!

How To Make American Buttercream

This is the buttercream recipe I use for all flower and succulent piping.  It’s quick and easy to make and perfect for piping petals as it holds its shape really well.  

If you like it a little less sweet, use all salted butter.  You can also cut through some of the sweetness by using lemon extract instead of vanilla if you like.

Vanilla Cupcake Recipe – Creaming Method

This is my favourite recipe for beautifully fluffy, light vanilla cupcakes!  By using the creaming method, I get more cupcakes per batch than the all in one method.   You can watch my video for this recipe on YouTube here.

I take the time to level the tops before I put them into the oven to ensure they all have a flat top.  Some people lower the oven temperature, but I find this doesn’t always work – and I bake at 160 because I WANT the top to have that delicious crust!  To each their own 😉

I make these cupcakes every Christmas for my family and me – they are my FAVOURITE!  Rich, chocolate orange sponge with chunks of chocolate (I use dark) topped with sweet, orange flavour buttercream… I’ve eaten almost a whole batch to myself this week!  My neighbours have eaten the rest (which means I shall have to bake some more… good times)!

You can find the orange flavouring in most large supermarkets (my favourites are in Tesco, Lidl a close second).  There is also a Dr Oetker one you can order online.  It keeps the buttercream the right consistency for piping flower petals, and you can colour it.

Vanilla Cupcakes – all in one method

I always use a large ice-cream scoop to fill the cupcake cases. It’s a really quick and efficient way to ensure the cakes are all roughly the same size.

Cupcake cases can be pesky little wotsits! A lot of them peel – after you’ve baked your lovely cakes and left them on a rack to cool, you’ll come back to find all the cases have peeled themselves off the cakes! It’s extremely annoying. Some bakers will say bake at a lower temperature for longer, but it doesn’t work for me – and I’ve been baking for 20+ years.  The more expensive cases peeled the worst! So I use the supermarkets own brand which are very reliable (every little helps…) or the Dr Oetker brand is also very reliable. The size you want to use with both these brands are the “muffin cases”.

Every oven is different so it may take a couple of batches to get to know yours. I’ve had 3 ovens in different homes and in each one I baked with different timings. It really is a case of bake it and see, then you can adjust your bake times accordingly. I always use the conventional oven setting so if you use a fan setting, you will also need to adjust temperatures and test it for the best results.

In the UK, I use the Doves Gluten Free Flours.  They are very good quality and can be easily found in the supermarkets.  You’ll find them in the Free From section. 

This recipe is for standard size cupcakes – in the UK I use “muffin cases”.  My cakes when baked measure 65mm across the top, 50mm across the bottom and around 40mm high.  My favourite cases to use are the Supermakets own (Tesco or Sainsburys normally) or the Dr Oetker muffin cases.  I find these cases NEVER peel on me!
